From India to Italy, Japan to Spain, croquettes — those satisfying little orbs of goodness — are a staple on menus around the world. Originating in France (the name stems from the French word meaning “to crunch”), croquettes are amazingly versatile, featuring any number of ingredients and flavor profiles, while acting as both a delicacy and a fast food. They’re so popular in the Netherlands that Dutch McDonald’s sell them on buns, calling them McKroket.
To get rolling on the croquette bandwagon, check out this video from Executive Chef Brian Millman at Atwood restaurant in Chicago. The restaurant is undergoing a renovation at the moment, primping for a spring 2015 unveiling, but Chef Brian offers a quick and easy primer on how to make his zucchini, yellow squash and carrot croquettes with herb-cucumber sauce. We’re lovin’ it.
