Because sometimes you want a cocktail — but without the headache. Enter: The mocktail. More bars and restaurants are also adding non-alcoholic drinks to their menus, a trend that we are here for and excited to fully embrace.

And who said a mocktail needs to be boring? Kimpton bartenders have put together 6 creative recipes that will excite your palate and satiate that desire for an ice cold glass in hand on a warm spring day.

Mocktail Recipe #1: Root Highball

Mocktail Recipe #2: Language of Flowers

Because is there anything more Spring-like than blackberries, lemon, and mint? No, no there isn’t.

Equipment

  • Glass: Rocks

Ingredients
  

  • 2 ounces Blackberry syrup
  • 1 ounce Lemon juice
  • 4 Mint leaves
  • Splash of soda water

Garnish with 2 skewered blackberries and a mint sprig

    Instructions
     

    • Dry shake all ingredients except the soda water and double strain into a glass with crushed ice.
    • Top with a splash of soda water and garnish.

    Mocktail Recipe #3: The Bramble

    Also known as an Apple-Pear Shrub, this fruity and earthy mocktail is perfect in place of a glass of Chardonnay.

    Equipment

    • Glass: Highball

    Ingredients
      

    • 1 part Distilled white vinegar
    • 1 part White sugar
    • 1 part Water
    • 1 part Apple (by weight)
    • 1 part Pears (by weight)

    Garnish with a splash of soda water and a lemon twist

      Instructions
       

      • Boil all ingredients and let simmer for 3 hours.
      • Puree and strain into glass with ice.
      • Top with a splash of soda water, to taste. Garnish with a lemon twist.

      Another classic, fruity Spring combination: Pomegranate and lemon. Yes, please.

      Pomegranate Tonic

      Equipment

      • Glass: Pint or Collins

      Ingredients
        

      • 1/2 ounce Grenadine
      • 1/2 ounce Lemon juice
      • 3/4 ounce Jack Rudy Tonic syrup
      • Soda water

      Garnish with a lemon wheel

        Instructions
         

        • Shake all ingredients and strain into ice-filled glass.
        • Garnish with the lemon wheel.

        • Glass: Pilsner

        Ingredients
          

        • 2 ounces Strawberry shrub
        • 2 ounces Lemon juice
        • 1 ounce Simple syrup

        Garnish with a mint sprig

          Instructions
           

          • Shake all ingredients and add to glass filled with crushed ice.
          • Garnish with the mint sprig.

          Hibiscus Tea & Lemonade

          Equipment

          • Glass: Pint or Collins

          Ingredients
            

          • 1 part Hibiscus tea
          • 1 part Lemonade

          Garnish with a lemon wheel

            Instructions
             

            • Pour equal portions of hibiscus tea and lemonade into an ice-filled glass.
            • Garnish with the lemon wheel.
