A bourbon enthusiast, Holly loves spending time on both sides of the bar, always with a thirst to learn more. She has been developing the cocktail program for 312 Chicago since 2005.


Name your Deserted Island Cocktail.

I would want a classic rum punch--with all the fruit on the island, it would be so fresh.

Who would you most like to sit and enjoy a martini with?

Roald Dahl. I love his stories and he’s traveled all over the world. Plus, I hear he was a drinker, so I think he’d be fun!



How do you express your individuality at work?

I really enjoy talking spirits with our regulars and teaching them about what I do. I’m also pretty playful, so I’m usually laughing and making jokes behind the bar.



What is your Hangover Cure?

Bitters and soda with a shot of whiskey in it, chased with an iced coffee.



If you could only have one drink for the rest of your life…what would it be and why?

Bourbon. Specifically, Prichard’s Double Barrel Bourbon. It's the best thing I’ve ever tasted, and I would never get bored with it.



What historical cocktail period inspires you most? 

The Prohibition Era. Cocktail making was very organic and specific—bartending was a very crafted profession. It inspires me to help drive that trend now.
